Today’s article is by Bea Kunz and deals with something we all should be doing – eating healthy. Bon apetit!

I have begun soliciting sponsors for the 2006 Senior Cookoff©. Two parties, as of this date, are very interested so I will get serious with my presentation to them. As I progress, I will keep you informed.

I want to thank everyone who expressed an interest in lowering their long distance phone bills by visiting:

2.7˘ per minute with no hidden fees is awesome.

Another item into which I am looking is free conference calling. The service accommodates up to 96 people for up to 6 hours at a time. A participant’s only cost is their long distance (assuming it is long distance) phone charges.
I’d love to hear your idea on such a service. Would you participate? If so, what topics would be of interest? How long should the call be? Any particular day better than the others? Etc., etc., etc.

Hurricane Katrina has produced some horrendous scammers. I don’t know about you but my mail box is full of phony solicitations. I used to think lawyers were the lowest form of human garbage until I came across scammers.
I know I don’t have to say this but please don’t respond to spammers soliciting your money for a cause no matter how worthwhile. If you want to help, do it through a charity in your city.

I came across a W. Somerset Maugham quotable:
“It is a funny thing about life: if you refuse to accept anything but the best you very often get it.”

Benefits Of Culinary Herb Seasoning.
Healthy is as healthy does. We are what we eat.
These statements have so much truth behind them. We have so much more control over our health and it really doesn't require a lot of "giving up" of things you really love.
Think about this: You love chicken and dumplings, but, you don't eat them often because they are rich, which in most cases translates to fat! Right?
(Easy fix) Cook the chicken in water with a large tablespoon of your favorite herb mix. Make sure you trim all the fat and use only the breast meat. Set aside and save the liquid.
(Dumplings) Use a recipe of self rising flour and plain ice water and a tablespoon of your favorite herb mix. No butter, no shortening and no salt. Add as much fresh ground black pepper as you like. Roll your dough out and cut just as you always do. Bring the chicken and liquid to a boil and drop the dumplings in. Cook in your regular manner.
You can use more or less herb seasoning depending on your taste. The end result, a better tasting dish and no fat, no salt.
HEALTHY!!
You can, not only have better tasting food but over time with a dedicated practice of this kind of culinary changes have a much healthier diet which translates into a healthier mind and body.
We must remember, as with anything, good changes come about slowly and with a plan. But......it doesn't have to be about giving up everything, but instead it's about adjusting and substituting.
Using culinary herbs as seasoning will over time translate to health benefits that effect all the things that we cope with as we age in years.
I look forward to sharing more interesting ways of tweaking your diet to add flavor to your food and help you to become healthier in the process. And for those who are already practicing this way of eating, we can learn from you.
Please feel free to contact me if you would like more information or wish to share the same.
